Mini Tangerine or Orange Cheesecakes
Makes 12

1 1/4 cups chocolate graham cracker
Crumbs
3 tablespoons sugar
6 tablespoons butter, melted
1 8oz pkg cream cheese, softened
½ cup sugar
1 large egg
3 tablespoons fresh tangerine juice or orange juice
1-tablespoon flour
2 tsp. tangerine or orange zest
Garnish - fresh whipped cream

Preheat oven to 350
Combine crumbs, 3 tbsp sugar, and butter.
Press mixture on bottom and halfway up
sides of 12-cup mini cheesecake pan.

Using electric mixer, beat cream cheese and sugar on medium speed until creamy.
Beat in egg, juice, flour, and zest, until batter is smooth. Spoon evenly into prepared pan.
Bake 18 minutes, or until set. (Can be made ahead and frozen.)
