1/4 cup extra-virgin olive oil
1 Spanish onion, 1/4-inch dice
4 garlic cloves, peeled and thinly sliced
3 tablespoons chopped Oregano
1/2 medium carrot, finely grated
2 (28-ounce) cans peeled whole tomatoes, crushed by hand and juices reserved
Salt
2 – 3 tablespoons chopped basil leaves (to taste)

1. Heat sauce pot on stove
2. Add olive oil until warm
3. Add in basil and garlic – this will infuse the olive oil with flavor
4. Make sure the oil isn’t too hot and the garlic doesn’t burn
5. Add a pinch of salt
6. Add in onion
7. Cook until onion is clear
8. Add in carrot – cook 5 minutes longer
9. Add in oregano and tomatoes
10. Cook for a few minutes then add in juices from tomatoes
11. Turn down burner to simmer sauce for a bit until all the flavors are cooked through – the carrot should add just enough sweetness to counteract the acidity of the tomatoes
12. For more hearty sauce you can add in meats, vegetables (I like cubed zucchini, eggplant and mushrooms, or meatballs – but do it before the tomato sauce goes in to ensure the flavors steep throughout.

Serve with pasta of your choice
