1---Pkg. of Refrigerator Pie Crusts
1 1/4 lb. Ricotta Cheese
4 Eggs, Room temperature
6 oz. Smoked Mozzarella Cheese***, diced
1/4 lb. Prosciutto, chopped
1 1/2 tbsp. Grated Cheese
1/2 tsp. Ground Black Pepper

Directions:
Directions:
Preheat oven to 350º.
Drain off any liquid on top of ricotta. Beat eggs in a large bowl until foamy. Add the ricotta and beat until the mixture is smooth and creamy, add the remaining ingredients.
Roll out one of the pie crusts into a 12 inch circle. Carefully ease it into a 9 1/2 inch tart pan, gently pressing against the bottom and sides. Pierce bottom with a fork. Spoon in the ricotta filling. Roll out second pie crust large enough to cover the pie. Seal edges and trim off excess crust.
Bake until top of pie is lightly browned, about 1 hour and 15 minutes. Cool on wire rack until completely cool. Cover pie and store in refrigerator. Remove outside rim of tart pan when you want to slice and serve.
***If you can't find smoked mozzarella cheese, you can use smoked provolone cheese. You can use unsmoked cheese but the flavor will be milder.
