1 Irish potato (medium-sized)
1 box confectioner's sugar
Peanut butter

Directions:
Directions:
Wash and boil potato with pealing on. When done, remove pealing and mash while hot. Add sugar, a little at a time, to the mashed potatoes. It will be very thin at first, but keep adding sugar until it becomes like dough. Roll out as you would pie crust. Spread peanut butter over potato-sugar mixture; using as much as you wish. Roll up. Refrigerate before cutting. After cooling, cut into 1/2 inch slices and serve. Keeps well in refrigerator.
