Filling
1/4 cup flour
6-7 apples (I prefer green golden and Jonathan, but any tart apples work)
1/2 cup white sugar
1/4 cup brown sugar
3/4 teaspoon cinnamon
2 Tablespoon butter
Mix flour sugars, and cinnamon add apples and toss until well coated and set aside.


PASTRY CRUST
2 cups flour
1/2 teaspoon salt
2/3 cup shortening (crisco is best)

Directions:
Directions:
Cut shortening into flour with pastry blender or your hands until the size of peas. Sprinkle 1 Tablespoon ice water over 1/4 of the mixture, mix until dough is moistened. Repeat with small amounts of the mixture adding 1 Tablespoon of ice water at a time until all the dough is just moist, using 6-7 Tablespoons water total. Do not over mix.

Divide dough in half and roll into a ball. Roll one ball in a circle to fit a 9-10 inch pie plate. To transfer pastry to pie plate, wrap around rolling pin and ease into pie plate. Be careful not to stretch pastry. Trim even with edges of pie plate. Add prepared filling into pastry lined pie plate. Make sure apples are laying flat. Cut butter in small pieces and put on top of filling.

Roll remaining pastry into a 12 inch circle. Place on top of filling. Trim 1/2 inch beyond edge of pie plate. Crimp edges as desired. Cut slits to allow steam to escape. Decorate top of pie if desired with cut outs from left over pie crust.

Bake at 375 degrees 50-60 minutes. or until golden brown and apples are tender.

serve warm with vanilla ice cream.

I made this pie with Tyler Florence, from The Cooking Channels "TYLERS ULTIMATE SHOW". He came from New York, with the film crew from England, to our Bed and Breakfast APPLE COUNTRY B&B and filmed the show. What a great experience it was. And so very fun to be on TV!!!
