1 lb. cooking apples (stewed apples) (1 lb. 4 oz. can be used if you want a very moist cake), 1 T. water, 1/2 lb. sugar. 2 tsp. baking soda, 2 eggs, 1/2 lb. butter or margarine, 12 oz. flour, 1 tsp. mixed spice, ( In the UK, this includes: cassia, coriander seed, nutmeg, ginger and cloves. Use whatever is available). 1 1/2 lb. fruit.(cake fruit includes raisins, sultanas, currants and mixed peel (orange and lime slices--1 oz. is enough if you use mixed peel). It's fine to use mostly raisins.

Line the sides and bottom of the cake pan with baking parchment. Mix apples, water and sugar together in sauce pan. Cook this mixture and leave to cool. Add baking soda, 2 eggs lightly beaten, melted margarine or butter, then flour, mixed spice and lastly fruit. Cook for 3 hours in 9" baking tin at 150º! I check half way through baking time and usually cover with brown paper so that the cake doesn't burn--use your judgment. Leave in the oven until completely cool. Bake this cake in the evening and leave to cool in the oven overnight.

I think this cake originated in a Women's Institute recipe booklet. The WI are made up of ladies who generally come from rural backgrounds or businesses, at least that's the type of membership in N Ireland. The ladies swap recipes and are into sharing all sorts of tips about gardening, baking and life in general. If you have seen the film, Calendar Girls, you will understand what they are about.
