Filling
1 c. Extra Fine granulated sugar
3 T corn starch
2 T flour
2 T cocoa
2 c milk
2 T butter
3 beaten egg yolks
pinch of salt

Meringue
3 egg whites (left over from filling)
4 1/2 T sugar
1/4 tsp cream of tartar
1 tsp vanilla

Crust
1 c flour
2 T Extra Fine granulated sugar
1/2 tsp salt
1 stick butter

Pie Crust:
Mix all listed ingredients. Press into pie pan (Do not roll). Poke holes in bottom with fork. Bake at 350ºF until brown.

Filling:
In a double boiler, heat milk. Mix cocoa, sugar, salt, flour, and corn starch in a separate bowl. When milk is warm, beat in cocoa mixture. Beat yolks in a separate bowl. Pour about 1/4 c of filling into eggs to bring them to temperature. Slowly continue to combine filling and eggs. Pour into prepared and cooled pie crust.

Meringue:
Beat listed ingredients on high with mixer until peaks form. Pour over pie and bake at 500ºF until brown (about 5 minutes).
