1 c. sugar
1 c. molasses (robust)
1 c. lard (or shortening)
1 c. hot (not boiling) water
6 c. flour
2 tsp. baking soda
1 1/2 tsp. cloves
1 tsp cinnamon
1/4 tsp allspice
1/4 tsp. ginger
pinch salt

Directions:
Cream together sugar, lard and molasses. Mix baking soda, salt and spices in with 2 cups flour. Alternate adding the flour and hot water to the sugar mixture (you will have to add the last cup of flour by hand). Refrigerate the dough 2 hours or overnight. (This will make it easier to handle and roll out or shape into balls).
On a floured surface, roll the dough approximately 1/4 inch thick and cut out with your favorite cookie cutter. Sprinkle cookies with sugar and place on a cookie sheet covered with parchment paper. Bake at 350º for 10 - 11 minutes.
As an alternative to rolling these cookies you can form them into 1 1/2 - 2 inch balls, roll in sugar, place on cookie sheet and press lightly with the flat bottom of a glass. Bake as above
