1-2 fryers, cut up
2 cups flour
Salt and Pepper
Bacon Grease

Directions:

Put flour, salt and pepper in a bag large enough to shake the chicken pieces a few at a time.
In a cast iron skillet, heat bacon grease and vegetable oil until hot and crumbs bubble when dropped into hot oil. Fry the chicken in the pan until golden brown. When chicken is mostly done all the way through, place on a plate or baking dish and put in a 350 oven for 20 minutes or so to crisp.
While chicken is in the oven, you can make gravy with the crunchy drippings in the pan. (See gravy recipe.)
