1 14 cups shelled hazelnuts
6 egg whites
1 cup sugar
3 tablespoons flour
1 tsp cinnamon

Start your oven at 350ºF or moderate and grease a cookie sheet thoroughly. Tip: after cookies are baked, if you have trouble getting them off the sheet, reheat a minute or two in oven.

Grate or grind nuts. Using a rotary grater makes nuts fine and fluffy. Beat egg whites until they hold a point.

Mix gently or fold grated nuts, sugar, flour and cinnamon into the stiffly beaten egg whites. Mix until all ingredients are thoroughly combined.

Drop teaspoonfuls of batter into baking sheet. Smooth tops of cookies with a wet spatula into very thin oval shapes. Keep even in thickness.

Bake 10-14 minutes or until edges brown. Remove from sheet immediately. Shape over rolling pin until cool.
