3 c all-purpose flour
1 tsp salt
1 tsp sugar
1 c plus 1 tbs butter flavor shortening, chilled
1/2 c ice water
1 tbs vinegar (red wine vinegar inhibits gluten=chewy)
1 egg, beaten

Directions:
Directions:
Chill all ingredients, including the flour and vinegar. Combine the flour, salt and sugar. Cut in shortening with a pastry blender until the mixture resembles cornmeal. In another bowl, mix water and vinegar with the beaten egg. Add the liquid mixture, 1 tbs at a time, to the flour mixture, tossing with a fork to form a soft dough.

helps to use marble cutting board cold from the frig, as well as the rolling pin.
Can use cookie cutters also to decorate top of pie or fork to make spines on leaves
crimping foil on outside edges of pie crust before placing in oven help cook crust more evenly.
