1 2-3 Rib Beef Rib Roast (4-6 lbs)
1 C Milk
Salt and Pepper
1/2 t Salt
2 Eggs
1 C Flour
Horseradish
Mayonnaise

Directions:
Directions:
Place roast on rib bones in oven roasting pan
Sprinkle with salt and pepper
Roast in 325º (Rare: 1 3/4-21/2 hrs; Medium: 2 1/4 - 31/2 hrs; Well: 2 3/4 - 4 hrs.) Allow to stand 15 minutes
5 minutes before end of roasting prepare Yorkshire Pudding:
In Md bowl gradually beat in flour until smooth
When roast is done spoon off 2 T drippings and divide into 12 3" muffin cups or 24 mini muffin cups
Tilt to coat evenly
Turn oven to 400º
Heat muffin pan in oven 5 minutes
Pour 2 1/2 T batter in each greased muffin cup
Bake 30 minutes
Loosen Yorkshire Pudding
Transfer to platter and serve with roast and Yorkshire Pudding
(Horseradish and Mayonnaise)
