3 cups sugar
1/2 cup light Karo syrup
1/2 cup water
2 egg whites
1 tsp. vanilla or peppermint extract.

Lightly butter a 2 1/2 ' sheet of waxed paper and lay it out on the counter .

On low heat ,In a large heavy pan cook sugar, corn syrup and water till sugar is dissolved. If you get sugar crystals on side of pan, scrape them down with a rubber spatula , put cover on pan till they dissolve .

Turn up heat and Cook without stirring to a "soft ball" stage on a candy thermometer. Beat egg whites stiff with mixer and slowly add 1/2 of the hot syrup, while still beating."
Continue to cook rest of syrup to the "Hard Crack" stage . Slowly drizzle into the egg white mixture, beating all the while.

Continue Beating till thick and looses its gloss. Add vanilla or peppermint extract. ( it will change consistency at some point and it will act like it will get hard soon) ( this beating can take a long time)
Drop by teaspoonfuls onto the buttered waxed paper. Work fast as it will get hard fast.

This gets really hot. Keep the kids away while making it and put a pan of cold water in the sink before you start in case you get a burn.
Most recipes do not call for adding half of the syrup mixture to the egg whites early, but that is the secret for this recipe actually turning out.
Also you can add 1/2 small box of Cherry Jello in place of the vanilla .
