2 egg whites
1/2 t tsp vanilla
1/2 tsp almond extract
3 Tbsp oil
8 Tbsp flour
1 1/2 tsp cornstarch
1/4 tsp salt
8 Tbsp sugar
3 tsp water

Write fortunes on small slips of paper. Line your pans with parchment paper (this is critical) and preheat oven to 300 degrees. Beat egg whites until fluffy. Add oil and extracts. Mix dry ingredients and add the water to them. Add this mixture to the wet ingredients.

Making only 4 cookies to a sheet, place a Tbsp batter on the pan, 3 inches apart. Once all 4 Tbsp batter are on pan, tilt the pan in a circular motion (fastening parchment paper to the pan with your thumbs) to increase the diameter of the cookies. Tilt in the same fashion you would do so, for making crepes. Try to spread the batter to make 4 inch circles.

Bake at 300 for 14 minutes.

**working extremely quickly**
- Be sure to have muffin tins on hand for cooling the cookies!-
- have a wide-rimmed glass on hand for folding the cookies
Working quickly, remove a cookie and flip it over in your hand (use gloves if it is too hot).

Place a fortune in the middle and bring two tips of the cookie together to form a loose taco (don't crease the middle).

While holding the "taco" together with one hand, use your thumb and index finger to pull the edges down on the rim of a glass.

Place the finished cookie in a muffin tin to cool (so it maintains it's shape until stiff)

If cookies are still chewy, bake in muffin tins an additional 5-7 minutes.

This is an extremely easy recipe, if you follow the directions. It is key to only bake 4 cookies at a time, as they cool fast and cannot be shaped after cooling.

If the folding directions don't make sense, just Google "how to fold a fortune cookie". there are many pictorial instructions out there!
