4 cups shredded coconut
4 cups powdered sugar
3/4 cup mashed potatoes
2 packages of chocolate chips (12 ounces)
1/2 package of semi-sweet chocolate (4 ounce)

Directions:
Directions:
Mix coconut, sugar, and potatoes with a spoon, roll into truffle-like balls, and put into freezer. Melt the chocolate in a double boiler. Dip the frozen balls one-at-a-time into the chocolate. Set on wax paper. Chill.
