7 oz. good quality semisweet chocolate
1 1/2 cups plus 1 tbsp. flour
1 1/4 tsp.ginger
1 tsp.cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
1tbsp. cocoa
1/2 cup unsalted butter
1 tbsp. grated fresh ginger
1/2 cup dark brown sugar, packed
1/4 cup unsulfured molasses
1 tsp. baking soda
1 1/2 tsp. boiling water
1/4 cup baker sugar

Line 2 baking sheets with parchment paper.Chop chocolate into 1/4" chunks; set aside. In a medium bowl sift together ginger,cinnamon, cloves,nutmeg and cocoa.
With and electric mixer beat together the butter and the grated ginger until whitened, about 4 minutes. add brown sugar until combined. add molasses and beat until combined. Dissolve baking soda in hot water, set aside. Beat half the flour mixture into the butter mixture. Beat in the soda mixture to butter mixture. Add remaining flour mixture into butter mixture. Mix in chocolate, and turn out onto a piece of plastic. Pat dough until about 1" thick. Chill for 2 hours or more. Heat oven to 325º. Roll dough into 1 1/2" balls.and place on baking sheets 2" apart. Refrigerate for 20 minutes. Roll balls into bakers sugar. Bake until surfaces crack slightly, 13-15 minutes. Let cool5 minutes and then transfer to a wire rack to cool completely.
