1/2 lb (2 sticks) butter or margarine, softened
1 c Splenda brown sugar or firmly packed brown sugar
1/2 c Splenda for baking or granulated white sugar
2 eggs
1 tsp vanilla
1 1/2 c all purpose flour
1 tsp baking sold
1 tsp cinnamon
1/2 tsp salt (optional)
3 c oatmeal (old fashioned or quick) uncooked
1 c crasins (dried cranberries)
1 c nuts (chopped) walnuts or pecans

Directions:

Heat oven to 350º.

Beat together butter and sugars until creamy. When using Splenda, it will not get as creamy as regular sugar, but it works.

Add eggs and vanilla, beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and craisins; mix well.

Drop by rounded teaspoons on ungreased cookie sheet. Bake for 10-12 minutes or until golden brown. Cool 1 minute on cookie sheet before removing to the wire rack to finish cooling.

This is like an old fashioned raisin cookie with the substitution of dried cranberries.

If you want to make this a bar cookie, press lightly in an ungreased 13 x 9 inch metal baking pan and bake for 30 - 35 minutes. Cool completely before cutting.
