1 medium eggplant, peeled and cubed
1 medium-sized bell pepper, chopped
1 medium onion, chopped
2 cloves garlic, minced
1 8oz can tomato sauce
1/2 teaspoon dillweed
1/4 teaspoon dried whole rosemary, crushed
1/4 teaspoon whole thyme

Directions:

Combine all ingredients in a skillet. Cover and cook over low heat 15 to 20 minutes or until tender, stirring occasionally. Serves 6.
