Cooked white rice
Onion

Sauerkraut

* First
Core out hard center of cabbage and add to boiling water. Cook until just pliable. Let cool until able to handle. Peel off each leaf and trim off the thick bottom part. Slice long ways so leaf is same as rest of leaf. Use largest leafs. (save smalls for cover)
*Now cook the meat mixture:
Buy salt pork from meat dept. (not every store carries it) Cut in small pieces and brown in fry pan. Depending on how much you are making chop a large onion and add to salt pork. Saute until tender. Add Grd. Beef -about 2 pounds. Brown. Drain grease. Mix in cooked white rice. Add tomato soup, (about 3 or 4 cans) mix about 1/2 can of water to each can added. Add just enough juice to moisten rice.
Grandma always shook some Worchestershire into soup mix.
** Now, put a spoonful into each leaf and fold over mixture. Spread a little of tomato soup mix in large baking pan (such as turkey roaster). Put cabbage rolls, folded side down in pan and layer, mixing more liquid between layers.
When done, add a light layer of sauerkraut to top and put rest of cabbage leaves on top to cover and pour rest of soup mix on top.
Bake in slow oven 325 for about 3-4 hours.

I have thought about Grandma's Cabbage rolls and have many fond memories over the years of growing up and watching her make them. While Grandma Hoch loved to make them, I remember how long it took. It was a family recipe from Austria, taught by her Mother, Maria Kuz and probably passed down from her mother. I never knew Maria, my Grandmother. She was born in Austria and came to America about 1906 with my mother.
When ever Grandma Hoch made cabbage rolls, we would be in school. It was much later when she came to live with me on Pimlico that she showed me how to make them. I made them once after she passed away and Uncle Herb thought they tasted just like Grandmas (maybe close).
