1/2 lb. butter (NOT margarine)
1/2 c. sugar
2 c. flour

1/3 cup raspberry preserves

Directions:

Melt butter.

Mix butter, sugar and flour together.

Roll dough into small balls.

Make a thumb print in the center.

Fill with raspberry jam

Bake at 350 degrees for about 15-20 minutes or until bottoms are lightly browned.

I came up with this variation of a butter cookie for an Irish themed business picnic we did this past summer at Bear Creek in Leonard, TX.

These were an instant hit, and while raspberry is delicious in this cookie, use your own imagination when you bake them yourself.

I actually took the advice of one of my sons and sprinkled some with green sugar in honor of the Irish.

How about filling them with chopped nuts? Chocolate Chips? A different jam? Any way you fix them, these are the perfect cookie when you’re limited for time, but not willing to sacrifice quality.
