1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 eggs
1 Tb blackstrap molasses
2 tsp vanilla extract
2 cups all-purpose flour
2 cups rolled oats
3/4 cup dry millet
1 ½ tsp baking soda
1 tsp freshly ground cinnamon sticks
½ tsp each freshly ground cloves and nutmeg
½ tsp salt
1 cup each dried cherries and chopped walnuts

Directions:

In a large bowl, cream butter and sugars until light and fluffy. Add eggs, molasses, and vanilla; beat well. Combine flour, oats, millet, baking soda, cinnamon, nutmeg, cloves and salt; gradually add to creamed mixture, mixing just until blended. Stir in cherries and walnuts.
Form golf ball sized rounds, and place on ungreased cooking stone or cookie sheet 2 inches apart.
Bake at 350 degrees for 13-16 minutes or until lightly browned and done in center. Cool 2 minutes before removing to wire rack.

I came up with this recipe one evening after my husband’s sweet tooth kicked in. Looking for ideas, as I often do, I came across a basic chewy oat cookie and made some of my own changes. The freshly ground cinnamon, nutmeg, and cloves are a must, as they make all the difference. I purchase these whole in the bulk section of Central Market, so they are more economically priced. Then I grind them myself because the flavor compared to the already ground, bottled versions can't be beat. The dry millet adds both a crunch and a nutritional boost to the already healthy oats. And the tart dried cherries and toasted walnuts are the perfect finishing touches. You’ll probably want to double or triple this recipe, and keep the extra dough on hand to make these over and over!
