1 Bottle (4 cups/1 liter of good quality rakija (sljivo can be substituted, but best with rakija)
1 cup granulated sugar
1 cup water

Caramalize the sugar over very low heat (usually takes about 10-15 minutes)in a deep steel saucepan (do not use Teflon). As it is turning a light golden color, take the saucepan off the burner and pour in one teaspoon water. Swirl the pan. Return the pan to the burner. Do not rush this very important step-let it develop a nice golden caramel color, but not deep brown, because it will affect the taste. The caramel color will happen quickly, so when all the sugar has caramelized, take the pan off the burner again, add the remaining water slowly. Finally, add the rakija or sljivovica to the caj. Return to burner and cook until tiny bubbles form around the rim of the saucepan. Do not overcook. Serve immediately in preheated thick glass cups (preheat with a little hot water, swirl the water then empty the glass).

Obviously, Šumadijski čaj has no tea, but depends on the quality of the rakija. Typically, Šumadijski čaj is served for our church holidays like Badnje Vece (Christmas Eve) and Bozic (Christmas) and all the winter Slavas.
