1 medium baking potato, peeled and chopped
1/2 tsp. salt
1/4 cup butter, softened
1 (16oz.) box confectioners sugar
1 1/2 tsp. vanilla extract
1/2 cup milk chocolate covered toffee bits
1 tbsp. water
4 drops green food coloring
1 (2.25 oz.) package slivered almonds
1/2 (14oz.) package orange candy melts

Directions:
Directions:
In a medium saucepan, place potato and just enough water to cover; add salt. Cook over high heat until potato is tender. Drain and mash potato. Place 1/2 cup mashed potato in a bowl; discard remaining potato. Add butter to potato, stirring until combined; allow mixture to cool. Stir in sugar and vanilla until smooth. Fold in toffee bits. Knead mixture by hand until smooth. Shape mixture into 3-inch carrots. Cover and refrigerate for 30 minutes. In a small bowl, combine water and food coloring. Add almonds and soak until desired color of green is reached. Place almonds on parchment paper to dry. Melt candy melts as directed on package. Using the tines of two forks, gently roll carrots in melted candy to coat. Place carrots on parchment paper to dry. Insert 3 almonds into the top of each carrot.
