7 medium cooking apples, thinly sliced (about 8 cups)
1/4 c. sugar
1/4 c. packed brown sugar
2 T. flour
1 t. ground cinnamon
1/2 t. grated lemon peel
1/4 t. salt
2 t. lemon juice
Flaky Pastry recipe
1 T. butter

In large bowl, lightly toss first 8 ingredients and set aside. Prepare Flaky Pastry Pastry. On floured surface with floured rolling pin, roll pastry ball into a circle 1/8" thick and 2" larger than 9" pie pan. Line pan with pastry; trim edge, leaving 1" overhang. Spoon apple mixture into plate; dot with butter; set aside. Set oven to 425º. Roll remaining pastry. Cut a few slashes; place over filling; trim edge leaving 1: overhang. Fold overhang under, bring up over rim to form edge; flute. Bake 40-50 minutes.
