1 quart fresh local strawberries
1 Cup sugar
2 Tablespoons corn starch
juice of 1 lemon
8" pre-baked pie shell

Directions:
Directions:
take half the berries, crush in a pan with the sugar lemon juice and corn starch. Cook over low heat, stirring often till thick and translucent.

cut the other half of the berries into halves or quarters depending on size and put in pie shell.

Pour cooked strawberry mix over berries in shell, cool then chill in fridge. Serve with real whipped cream or double or clotted cream (if we ever have cows in the family again!)
