1 cup Graham Cracker Crumbs
1 (14 oz) can Sweetened Condensed Milk
3 tbsp Sugar
1 pinch Salt
5 tbsp Butter, melted
1 pinch Cream of Tarter
3 Eggs
1 cup Heavy Whipping Cream
½ cup Key Lime Juice
1 Lime, sliced (optional)

Directions:
Preheat oven to 325°F. Mix graham cracker crumbs with sugar and melted butter. Press into 9” pie plate and bake for 5 mins. Remove from oven and allow to cool.

Separate 2 of the eggs, placing the two egg whites into a mixing bowl. Reserve the yolks in another bowl.

To the yolks, add one whole egg, lime juice and sweetened condensed milk. Whisk until smooth. With a clean mixer blade, beat the egg whites with salt and cream of tarter until stiff, but not dry. Fold the whites into the yolk mix. Pour into pie shell.

Bake in preheated oven for 10-15 mins or until set. Let cool at room temp then freeze minimum of 4 hrs. Just before serving , whip cream to form stiff peaks. Serve pie with whipped cream and lime slices.

A store bought graham cracker crust works well too. You do not need to prebake it.
