3 lbs. Brussels sprouts, trimmed and halved lengthwise
12 oz. thick-cut bacon, cut into 1 inch pieces
3 T. olive oil
2 onions (about 1 lb.) halved lengthwise and thinly sliced
salt and pepper
cider vinegar

Directions:
Directions:
Cook Brussels sprouts in boiling, salted water 5 minutes. Drain and rinse with cold water. Cook bacon until crisp, drain, reserving fat. Add olive oil and cook onions until browned. Transfer to plate. Add 2 T, bacon grease and 1 T. oil to skillet and on high toss Brussels sprouts until beginning to brown. Stir in onions, 1/2 bacon, slat, pepper, vinegar and toss. Sprinkle with remaining bacon.
