1 pkg. yeast
1/2 cup warm water
1/4 up brown sugar
2 tsp. caraway seeds
2 T. shortening
1/2 cup cold water
1/2 tsp. salt
4 cups sifted flour
2 cups rye flour (approximately)

Directions:
Directions:
Dissolve yeast in warm water. Bring brown sugar, caraway, shortening, cold water, and salt. Bring to a boil and simmer for 5 minutes. Pour into large bowl and add another 1 cup cold water. Stir in 2 cups flour. Add yeast mixture. Stir in remaining bread flour. Add 1 1/2 rye flour. Sprinkle 1/4 cup rye on board and knead until smooth and satiny, using only rye flour. Let rise in greased bowl until double--about 1 1/2 hour. Punch down and divide. Shape each loaf into a ball. Put on greased sheet. Make 2 cuts, 1/2 inch deep on tops. Let rise. Bake at 400º for 35 minutes.
