Pastry for 9" pie
3/4 lb. pork sausage links
1/2 cup onion, thinly sliced
1 medium green pepper
1 1/2 cups (6 oz.) Monterey Jack cheese, grated
1 T. flour
2 eggs, beaten
1 cup evaporated milk
1 T. parsley flakes
3/4 tsp. seasoned salt
1/4 tsp. garlic salt
1/4 tsp. pepper

Directions:
In a medium skillet, place sausage with a small amount of water; cover and cook on low heat 15-20 minutes. Remove cover and allow sausage to brown. Remove sausage from pan, drain, and slice crosswise. In 2 T. of the reserved fat, saute onion and green pepper for 2-3 minutes. Combine cheese and flour. Stir in sausage slices, green pepper, and onion. Spread in pie crust shell. Mix rest of ingredients and pour into shell. Bake at 375º for 35-40 minutes, or until filling is set.
