1 cup shortening
3/4 cup brown sugar
3/4 cup sugar
2 eggs
1 tsp vanilla
1 tsp baking soda in 1 tsp warm water
1 tsp salt
1-1/2 cups flour
2 cups quick cook oatmeal
1 cups chocolate chips (add more, if desired)

Directions:
Directions:
Preheat oven to 350 degrees. Cream together shortening and sugars; add eggs. Add vanilla, soda water, and dry ingredients. Stir in chocolate chips. Bake for 10 minutes.

We refer to these Oatmeal Chocolate Chip Cookies as "Kayla's Cowgirl Cookies" because most of the Cowboy Cookies have ingredients that Kayla is allergic to but she can have these!
