1 pkg. (3 oz.) Lemon Pudding Mix (not instant)
1 cup sugar
1/2 cup evaporated milk
1 tablespoon butter or margarine
1 cup flake coconut

Directions:
Directions:
Blend dry pudding mix and sugar in 2 quart saucepan. Stir in evaporated milk, add butter; cook and stir over medium heat until mixture comes to a boil, lower heat and boil 3 minutes, stirring constantly. Remove from heat; stir in flaked coconut, beat immediately (while pudding is very hot), it will become somewhat dull. Pour into greased loaf pan, 9 x 5 x 3 or drop by tablespoon on foil or wax paper; let cool until set, if candy sets up before all pieces are dropped add a few drops hot water. Make Pudding Candy Clusters using Chocolate, Butterscotch, Coconut Cream or Vanilla, using Walnuts, Pecans, Raisins, Peanuts or Coconut. Add 1/4 vanilla to vanilla mix.
