1/2 C. margarine
1 C. sugar
2 eggs or 1/2 C. low cholesterol egg substitute
1 tsp. vanilla
2 C. flour
1/2 tsp. baking soda
1/4 C. lemon juice
1 1/2 C/ powdered sugar
2 Tbsp. water
1/2 tsp. lemon extract

Directions:

Pre heat oven to 375º. Cream margarine and sugar in a mixing bpwl until light and fluffy. Add eggs or egg substitute and vanilla and beat well. Stir flour and baking soda together in a small bowl. Add to creamed mixture. Beat in lemon juice. Drop by teaspoonfuls onto ungreased baking sheet. Bake for 10 to 12 minutes or until cookies are light golden brown. Cool. In a small bowl, beat powdered suger, water and lemon extract until smooth. Spread on cooled cookies.
