1 cup oatmeal (quick cooking)
1 1/2 boiling water
1/2 cup brown sugar (firmly packed)
1 cup white sugar
1 1/3 c. flour
2 well beaten eggs
1 tsp. cinnamon
1 tsp. soda
1/2 tsp. salt

Cake Topping
6 TBSP butter
1/4 c. cream(evap milk will do)
1/2 c. brown sugar
1/2 tsp. vanilla
1 cup coconut and / or pecans

Directions:
Directions:
Pour boiling water over oatmeal and let stand for 20 minutes/ Add flour, eggs, cinnamon, soda, salt to oatmeal mixture. Bake at 350º for 30-35 minutes in 9 x 13 pan.While cake is still warm, mix the ingredients listed for cake topping and spread over warm cake. PLACE UNDER BROILER ABOUT 1 MINUTE UNTIL MELTED AND COCONUT IS LIGHTLY BROWNED. WATCH CAREFULLY.
