1 cup sugar
2/3 cup canned pumpkin
1 tsp. lemon juice
3/4 cup flour
2tsp. cinnamon
2 tsp baking powder
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 cup finely chopped pecans (optional)
powdered sugar

Beat eggs with mixer on high speed for 5 min. Gradually beat in sugar. Stir in the pumpkin and lemon juice. Fold dry ingredients into the pumpkin mixture. Spread mix onto a greased and floured 15"X10" pan. Top with pecans. Bake at 375º for 15 min. While baking, combine all the filling ingredients in med bowl, beat until smooth. Set a side. Turn out onto a piece of waxed paper that has been sprinkled with powdered sugar. Start at the narrow end of the cake, roll the cake and waxed paper into a "jelly roll" shape. When cool, unroll the cake and peel off the waxed paper. Spread filling on unrolled cake, re-roll, cool, slice and serve.

4 tbsp. margarine
