1 cup butter
1 cup sugar
1 cup brown sugar, packed
2 eggs
2 tsp. vanilla
3 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt

Filling:
1 8oz. package dried apricots, chopped
3/4 cup sugar
2 tbsp. lemon juice
3/4 cup Lambrusco wine
1 cup chopped pecans

Directions:
Directions:
Put the apricots in the Lambrusco to soak for one hour in a saucepan. Add sugar and lemon juice. Bring to a boil, stirring constantly until mixture thickens. Cool. Add pecans, if necessary add a little Lambrusco to bring mixture to spreading consistency. Cream butter and sugars, beat in eggs and vanilla. Sift in flour, baking powder and salt. Mix well. Divide dough in half. Roll out each half on a lightly floured board to an oblong 10 x 14 inches. Spread each half with filling. Then roll like a jelly roll. Wrap in plastic wrap. Chill several hours or freeze. Slice 1/4 inch slices with thin bladed sharp knife. Place on greased baking sheet. Bake in 400º oven 8-10 minutes.
