Cream together:
1 c. soft shortening
2 c. brown sugar
2 eggs

Sift together and work into creamed ingred.
3 1/2 c. flour
1 ts.p. soda
3/4 tsp. salt

Filling:
1 c. raisins
1/2 c. sugar
1/2 c. water
1 tbsp. flour
lemon juice
Cook until thick and clear

Using an ungreased pan; put a spoonful of dough on pan. Make dent in dough and fill with raisins then cover with a small piece of dough. Bake around 10 min. Temp.: 350 degrees

My dad loved raisin filled cookies but I never remembered having any except the ones that came home in my dad’s lunch box because my grandma Nottingham sent some home.with dad. Mom thought making raisin filled cookies was long and tedious. All that rolling out and cutting out etc. etc. That is until after we moved into Sharpsville. Theresa Hazi shared this easy, good recipe with us and Dad got his favorite cookie once again
