4 Pieces sliced Calves Liver
1-2 Medium Onions, Chopped
1/2 Stick Butter or Margarine (4 tbsp)
1-2 Tsp Flour for gravy
1 -1 1/2 C Water
Flour to cover liver before cooking.
Salt and Pepper

Directions:
Directions:
In frying pan melt butter or margarine. Flour the liver slices. Add to pan and brown. Remove from pan. Set aside. Add chopped onions to butter in pan (if you need to add more butter do so) Cook onions until tender. While onions are cooking cut liver into bite size or larger pieces. When onions are tender sprinkle flour over onion, butter mixture. Stir well to form a paste as if making gravy. Add water to mixture a little at a time until it becomes gravy. Add cut up liver to gravy mixture. Cook just a few minutes more.(It doesn't take long for liver) Salt and pepper to taste. Serve over rice. Enjoy

This is one of John's (Jack's) favorite dishes. Calves liver is hard to find. That is the best kind. If you aren't a big Liver lover add lots of onions.
