2 lbs cooked squash, drained and smashed.
1 med onion chopped.
1 small bell pepper chopped.
1 small jar pimento drained and chopped.
2 med carrots grated.
1 can cream of chicken soup.
1-8 oz package sour cream.
1 pkg Pepperidge Farm dressing mix.
1 stick of butter.

Directions:
Directions:
Mix all ingredients together (except for stuffing mix and butter) and set aside. Melt butter and mix into dressing mix. Pour 1/2 of dressing mix into bottom of greased 9x13 baking dish. Cover with squash mixture and then top with rest of stuffing mix. Bake at 350 for 30-45 minutes.

You can freeze this dish for a latter cooking date. If frozen cook for 2 1/2 hours at 350.
