2 medium onions, chopped;
1 lb ground beef;
1 clove garlic minced;
3 cups beef stock;
1-28 ounce can diced tomatoes, with liquid;
1-1 lb bag frozen mixed vegetables;
2 Tbsp parsley, chopped;
1/2 tsp basil;
1/4 tsp thyme;
salt and pepper;
8 ounces acini di pepi pasta (half a box) cooked;

Directions:
In large soup pot, brown ground beef with onions and garlic until onions are soft. Add rest of ingredients (except for pasta) and bring to a boil. Remove from heat and let sit overnight. Simmer one hour before serving. Add pasta to individual soup bowls just before serving.
(To serve on same day, simmer for one hour after bringing to a boil.)
