3 c. butter (softened)
4 c. brown sugar
2 c. sugar
2 eggs
2 tsp. vanilla
8 1/2 c. flour
3 1/2 c. oats
1 tbsp. + 1 tsp. soda
1 tbsp. + 1 tsp. cinnamon
2 tsp. salt
2 lbs. sweet potatoes (drained)
2 c. chocolate chips

Directions:
Cream butter and add sugars and continue until light and fluffy, approximately 15 mins. Beat eggs slightly, add vanilla, add to creamed mixture. Mix dry ingredients and add alternately with pumpkin to creamed mixture. Stir in chocolate chips. Dip with a #40 ice cream scoop. Cook 325º for 12 mins.
