1 1/2 c. chopped dates or raisins
2 eggs
1 c. sugar
1/4 c. butter
1 tsp. real vanilla extract
1/4 tsp. salt
3 c. crisped rice cereal
1/2 c. chopped pecans or walnuts
shredded coconut

Directions:
Directions:
Combine first six ingredients in a frying pan over low heat. Cook for 10 minutes, stirring constantly. Cool. Add crisped rice cereal and nuts; mix into the date/raisin mixture well. Form into balls and roll each ball in chopped coconut.

I call these " Alexie's Cookies" (my grandson) because he is allergic to wheat. I love finding recipes that he can eat and doesn't feel left out when all my other grandkids are eating their cookies. I hope that you enjoy these Alexie!!!!
