1 can (21oz) cherry pie filling
1 can (16oz) whole-berry cranberry sauce
1/4 c. sugar
3 tbsp. quick cook tapioca or flour
1 tsp. lemon juice
1/4 tsp. ground cinnamon
1 2-crust pie pastry (use your favorite recipe or store bought)
2 tbsp butter
1 egg white lightly beaten

Preheat oven to 400º. Combine the pie filling, cranberry sauce, sugar and tapioca (or flour) lemon juice and cinnamon. Let stand for a few minutes. Prepare pie crust, line bottom crust in pan and cut the top crust into strips for latticing. Spoon the filling into the lined pie pan. Dot with butter. Lattice the remaining pie crust strips across the top and flute and seal the edges. Brush with the egg white for a beautiful glossy finish. Bake for 35 to 40 minutes or until crust is golden brown and filling is bubbly. Cool and enjoy!

I like to try a few new recipes each year, especially around the holidays. I found this recipe in my favorite cooking magazine, Taste of Home. We made two and had fun sharing one with some dear friends on Christmas Eve. It was quite the adventure since they live in the deep woods of Oregon and have a mile long driveway. We got stuck in the snow and had to be rescued by 4 wheel drive. The pie made it in one piece and was loved by all. Lots of fun memories were made that day. They served a lovely Shepherd's stew (for Christmas) and bread bowls to eat it from. I'll try to share that recipe as well. It was wonderful!
