1 1/2 cups left over mashed potatoes
1 egg
1 onion, grated
1/2 cup flour
2 tsp. baking powder
1 tsp. salt
freshly ground black pepper

Directions:
Directions:
In a mixing bowl combine mashed potatoes, egg, grated onion. Mix well by hand. Then add baking powder and salt. Now add flour, starting with about 1/2 cup. You may need to add a little more flour so that it holds to a spoon. Be careful not to add too much flour here.

Add about two tablespoons of oil into a frypan. When the oil is hot, drop the pancakes into the fry pan, allowing enough space in between each potato pancake. Allow the pancakes to cook until you can see little air bubbles popping through and they are firmly set. Once they are firmly set, turn the pancakes over. Season with a little salt and freshly ground pepper and continue to cook until they are nicely browned.

Top with butter and/or sour cream
