It works best to use leftover cold mashed potatoes. You can make any quantity. If you use 1 cup of potatoes, use 1 cup of flour and 1 egg; if you use more than two cups you'll probably want 2 eggs. Mix and shape into balls, whatever size you desire. Put into rolling boil of water, cook until they float to the top.

I first tried these when I was dating Pat. I had met his family for the first time at Christmas dinner. I didn't really care for the dumplings at first but then they kept showing up at every holiday meal and now I really enjoy them.
