1 lb flour
1-2 eggs
4 oz swiss cheese(Ground)
1 large onion chopped
¼ tsp salt
1 tblsp oil
4 qts water (Salted)
¼ lb butter
Milk or water

Directions:
Directions:
Stir flour,salt and some milk or water and beat to a thick mixture. Add the eggs and oil plus the rest of the milk or water. Continue to beat until blisters form and break. Bring 4 qts water to a boil. Slowly let the dough drop through a colander. Preferably a spaetzle apparatus. As soon as spatzle rise to the surface of the water remove with a perforated spoon.

Continue as above until all the dough isused up. Meanwhile, Saute butter and onions in a large frying pan.

In a casserole dish place layers of spatzle, cheese, and parts of the butter and onions together. Save some of the butter and onions for the very top layer. Keep warm in oven.
