1 lbs. split peas
ham hock
1 cup carrots, diced
1 cup celery, diced
1 cup onions. diced
1 cup potatoes, diced

Directions:
Directions:
Rinse a pound of green split peas in cool water. Place your ham hock in a stock pot. Add the split peas. Add chopped carrots, celery, onion and potato. Cover ingredients with water. Cover pot and cook on medium heat for at least two hours. Stir, the meat should fall off of the bone and the peas will soften. Remove the ham bone and stir and cook until soup is to desired thickness. Great with crackers. Also, great when made in the crock pot!
