1 lg Eggplant sliced into 8 slices 1/2" thick
Salt
All Purpose Flour
4 oz Goat Cheese
2 tbsp Parsley, chopped
1 jar Classico Fire Roasted Tomato and Garlic Pasta sauce
1 c olive oil, approximately
2 tbsp yellow pepper roasted

Lightly salt eggplant, let stand 30 mins. Rinse and pat dry, toss in flour
In pan heat 6 tbsp of olive oil, Fry 3 to 4 eggplant rounds at a time until golden. Absorb on paper towels.
Combine goat cheese, roasted yellow pepper and parsley
Spread pasta sauce in 8 in baking dish. Place 4 eggplant slices on sauce, cover with cheese, top with remaining eggplant; top with remaining cheese
Bake uncovered 25 to 30 minutes in 350º oven
