1/4 c. dry breadcrumbs
1 T grated Parmesan
1 tsp. paprika
1 tsp. dried thyme
1/2 tsp. garlic salt
1/4 tsp. ground red pepper
1/3 c. low-fat buttermilk
4 chicken breasts
Cooking Spray
1 T. butter

Directions:
Directions:
Preheat oven to 400º.

Combine first 6 ingredients in a shallow dish. Place buttermilk in a shallow dish. Dip chicken in buttermilk; dredge in breadcrumb mixture. Place chicken, breast sides up, in a jelly roll pan coated with cooking spray. Drizzle butter over chicken. Bake for 40 minutes or until done.

If you don't have buttermilk on hand just use regular milk. The spices in the breadcrumbs give it a really good flavor.
