Crust:
1/2 lb. melted butter
15 graham crackers, crushed

Filling:
16 oz. cream cheese
1 pint sour cream
3 eggs
1 TBSP vanilla
1 cup sugar

Topping:
1 pint sour cream
3/4 cup sugar
1 tsp. vanilla

Directions:
Preheat oven to 350º

CRUST:
Add some sugar to melted butter to taste.
Mix the graham crackers in well.
Grease a Springform pan, add crust mixture and push into place.

FILLING:
Cream cream cheese until creamy.
Gradually add the sugar.
Add eggs one at a time, beating well after each one. Add Vanilla. Turn the beater to low.
Add the sour cream. Ladle into prepared crust. Bake at 350 for 1/2 hour.
Turn off oven and leave cheesecake in for an additional hour. Remove.

Preheat oven to 475.

Make topping:
Mix sour cream, sugar and vanilla well together. Pour over cheesecake. Bake 10 minutes at 475.

Let cool one hour before refrigerating.
Best to make the night before.
