2 1/2 Cups grated zucchini (don't peel, but wash well)
3 eggs
2 cups sugar
1 cup vegetable oil
1 tablespoon vanilla
1 cup chopped nuts
2 cups flour
1 tablespoon cinnamon
2 teaspoons baking soda
1/4 teaspoon baking powder
1/2 salt

Directions:
Directions:
Beat eggs and sugar until frothy. Add oil and vanilla. Beat until thick and lemon colored. About 15 minutes.
Sift four, cinnamon, baking soda, salt and baking powder. Stir flour mixture into egg mixture, add zucchini and nuts, mix well by hand. Pour into 2 oiled and floured 8x4 1/2x3 bread pans. Bake at 350º for one hour, or until cake tester comes out clean. Cool completely in pan, then turn over pan and take bread out. To store, cover with foil and place in Ziplock Bag.
